This cheese's powerful flavour comes into its own thanks to the extended maturation. Due to this long aging process, the cheese develops beautiful ripening crystals that deliver a slightly salty kick and a rich, full flavour. It has nutty tones, enriched with a hint of caramel and a firm, bold bite. A full-bodied cheese that pairs wonderfully with robust red wines.
