Altobello products are air-dried next to a national park, high in the mountains of Abruzzo. Flat Pancetta is a traditional Italian cured pork belly, carefully seasoned with salt and aromatic spices, then slowly air-dried. Unlike rolled pancetta, the flat variety retains its slab-like shape, making it ideal for slicing or dicing. This spicy pancetta can be used to replace mild pancetta in any recipe, like pasta carbonara, to add a bold kick.
