Altobello products are air-dried next to a national park, high in the mountains of Abruzzo. Finocchiona Salami is a traditional Tuscan cured meat made from finely ground pork and flavored with fennel seeds, which give it its distinctive, aromatic character. It's slow-cured to develop a tender texture and a mildly sweet, savoury flavour with a hint of aniseed from the fennel. It pairs well with Pecorino Romano, and other sharp, hard cheeses.
